The grapes were harxested ’y hand at 98J to º2J Balling during the end
of Fanuary and ’eginning of 3e’ruary. The fruit was crushed and then
coolvfermented in temperaturevcontrolled stainlessvsteel tanks at 9%JC for a
period of two to three weeks. No skin contact was allowed and only the freevrun
1uice was used. The wine was leb on the lees for almost two months prior to
final ’lending.
